SCRAMBLED EGG

MY CLICKS
take a pan and heat it up.add oil-1&1/2 tbsp and when it's hot tip in jeera-1/2 tsp,curry leaves-1 sprig,onions finely chopped-2 big,green chillies-2 finely chopped at the same time and fry until the onions turn light brown.break 5 eggs and add to the pan.when the eggs are cooked then tip in salt-1/2 tsp and garlic chilli pd-1 tsp and mix nicely.serve with toasted bread,chapathi or rice.

CHICKEN FRY

take curry cut chicken-1&1/2 kg.wash nicely and put it in a vessel,tip in salt-1 tsp,red chilli pd-5 tsp,turmeric powder-1/2 tsp,green chillies slit-6,ginger garlic paste-4tsp,onions finely chopped-4 big.leave this marinated in the friz for 2 hours for better results.otherwise just mix everything nicely and cook covered for about 25 min or until you can bite into the chicken on a medium flame.then open the lid and cook on high flame until the water dries up.

take a big pan for frying,so that the chicken will not be crowded.in the pan add oil-4 tbsp,cloves-3,cardamom-1,cinnamon-1 inch piece,cashews-10-15,curry leaves-4 sprigs one after the other and fry until the cashews are light brown in colour.now add the cooked chicken,
fry for sometime and then tip in garam masala-1&1/2 tsp and mix nicely.

CORIANDER RASAM

fry green chillies-2,jeera-1tsp in a pan with 2 tsp of oil.grind them in a small mixie jar.when they are ground,add garlic cloves-4,peppercorns-1 tsp,coriander leaves-1 small bunch,coriander seeds-2 tsp and again blend.now put this mixture in a vessel.pour 1.2 lt water in it.also add tamarind paste-2 tsp or according to taste.heat the vessel on the stove until the rasam boils and reduces little.

nicely wash and soak dry prawns for 15 min.heat a pan with 1 tbsp of oil.add ginger and garlic paste-1/2 tsp and fry.tip in onion-1 big which is chopped fine,green chillies-2 slit and halved,pinch of salt and few curry leaves.fry nicely until onion is light brown.now tip in the soaked dry prawns and fry for a min or two.

break eggs-3 and add to the pan.when the eggs are cooked add salt-1/2 tsp,red chilli pd-1 tsp and garam masala-1 tsp and mix nicely.

BLACK CHANA WITH TADKA

take 4 handfuls of blackchana,wash 2-3 times and soak them overnight with double the quantity of water.add 1 tsp of salt and cook them in a cooker for 3 whistles with the same water until they are soft.take a pan and heat it up with 2 tsp oil and tip in broken dry red chillies 8-9,mustards-1/2 tsp,uraddal-1 tsp,curry leaves-2 sprig and after they change colour tip in the boiled black chana and fry for 2 min.check the salt and adjust.

MOONGDAL SNACK

take halidram's moongdal-1 small bowl.finely chop 1/2-onion small and 1-green chilli.mix the onion and green chilli with enough salt and squeeze some drops of lime juice,coriander.the moongdal also has salt in it.mix everything nicely

MINT BUTTERMILK

grind mint leaves10-15+jeera-1/2 tsp+salt-3 or 4 pinches to a smooth paste. to this paste add buttermilk
and blend.serve chilled.

BANANA AND BEETROOT SALAD

required:beetroot-1 small,bananas-2,almonds-2,raisins-10,cashews-2,mint leaves-2 chopped,honey-1 tsp
method
cut the beetroot in square pieces. boil beetroot by sprinkling few drops of water.cook it uncovered.turn off.when the beetroot pieces
come to room temperature, in the same dish add bananas which have been cut in round slices, almonds blanched &skinned &crushed coarsely,raisins, cashews crushed coarsely,mint leaves, honey and mix nicely.serve cold.

CRISPY POTATO FRY

cut the potatoes-1/2 kg in small squares.heat a pan with 1 tbsp of oil and tip in mustard seeds-1/2 tsp,uraddal-1tsp and let them change colour.add curry leaves-1 sprig,turmeric-1/4 tsp,diced potatoes to the pan and fry on high flame for 1 min.do not stir continuously.also add salt-1/4 tsp and let the potato pieces in the bottom turn light brown and then move them to the top and let the other pieces also turn light brown.now tip in jeera pd-1/2 tsp and dhania pd-1 tsp and mix nicely and fry for somemore time.lastly add garlic chilli pd.

BEETROOT FRY

cut 3/4 kg of beetroot in small squares.sprinkle few drops of water on them and boil them for 3-4 min in an open pan until water dries up completely.
take a pan and heat it up with 1/2 tbsp of oil.tip in mustards-1/2 tsp and uraddal-1 tsp and after they change colour, tip in curry leaves-1 sprig,onion-1 big chopped,green chillies-2 slit and halved,salt and fry.when the onions start turning light brown add ginger&garlic paste-1/4 tsp and fry until the raw smell disappears.also tip in turmeric-1/4 tsp.now the beetroot pieces are ready to go in.
fry the beetroot for some time and tip in garlic chilli pd-1 tsp and mix nicely.

DRUMSTICKS WITH MILK

required:drumsticks-2,oil-1 tbsp,mustard seeds-1/2 tsp,cumin seeds-1/2 tsp,curry leaves-1 sprig,onion-1 big finely chopped,turmeric pd-1 tsp,salt-according to taste,water-1&1/2 cups,red chilli pd-3/4 th tsp,milk-3/4 th cup which is boiled and in room temperature,chick pea flour or riceflour-1 tsp
method
wash and cut drumsticks in pieces.heat up a pan with oil.add mustards to the pan and after they pop,cumin seeds.let them change colour and then tip in onions,curry leaves,salt and saute for 2 min.add the drumstick pieces to the pan and fry some more until the onions start turning light brown in colour.pour water and tip in red chilli pd.cook covered on low flame until the drumsticks are soft.
mix milk with riceflour or chickpea flour.there should be no lumps.pour the milk into the pan when there is still some water left in the pan and stir.turn off before the milk splits i.e about a minute.the raw smell of the flour added should also disappear.

cut raw mango-1 in thin slices along with the skin.heat a pan with oil-1tbsp,dry red chillies-2 broken in half,mustards-1/2 tsp,curry leaves-1 sprig and fry.now tip in mango pieces and mix nicely.after a minute
add just enough water to immerse the mango pieces and cook until mango turns soft on a high flame.tip in turmeric-1/4 tsp,salt,green chilli-1 slit,red chilli pd-1/2 tsp,jaggery grated-100 g.nicely mash the mango pieces.this can be kept 
in the refrigerator for 10 days when stored in a clean dry vessel.serve with curd rice,chapathi,idli,dosa.

CARROT FRY

chop carrot-1/2 kg in small squares after washing and peeling them.add water-less than 1/4 cup in a pan and tip in carrot.cook the carrot  for 3-4 min until water dries up.

heat a pan with 1/2 tbsp of oil and add mustards-1/2 tsp,uraddal-1 tsp,fry.tip in chopped onion-1 medium,green chilli-1 slit.fry until the onion turns translucent and then add  and ginger&garlic paste-1/2 tsp,turmeric-1/4 tsp,salt-according to taste,curry leaves-1 sprig.fry until the raw smell of paste disappears.tip in carrot pieces and fry for 7-8 min.lastly add garlic chilli pd.

MOONGDAL

wash and soak 1 small bowl of  yellow moongdal for 10 min.heat a pan with 1 tbsp oil in it.tip in mustards-1/2 tsp,jeera-1 tsp, let them change colour.now tip in chopped onion-1 small,green chillies-2 slit,curry leaves-1 sprig and fry for a minute.now add soaked and drained moongdal-1 small bowl,fry until the aroma comes from the dal and add water-3 small bowls and cook in medium flame until moongdal turns soft.add red chilli powder-3/4 tsp and salt-1/4 tsp or according to taste.the dal should not turn mushy.serve with rice or parantha.

CHOCOLATE CUSTARD

boil 1/2 lt milk with 5 tbsp of sugar.set aside 1 cup milk and to this add drinking chocolate pd-2 tsp,custard pd-6 tsp,cocoa pd-4 tsp and mix without lumps.add this mixture to the boiling milk, stirring all the time.when the custard thickens turn off and cool.grind the mixture to make it smooth.refrigerate and serve with chopped strawberries or chopped walnuts.

take brown bread slices-2.put chopped strawberry and little paneer on one slice,sprinkle some brown sugar on the slice and cover with the other.mix cream-1/2 tsp,egg-1,cinnamon pd-2 pinches,vanila essence-3 drops along with brown sugar-1 tsp in a big bowl.beat it nicely.dip the sandwich in egg mixture on all sides and fry on pan.press the sandwich while frying.

CAULIFLOWER EGG FRY

take medium sized cauliflower-1.cut into florets and soak in salted water for 15 min,also add turmeric-1/2 tsp to water.in a pan take oil-2 tbsp and heat it up,tip in chopped onions-2 small,green chillies-3 slit and cut, fry.now tip in 1 medium-cauliflower minced in a vegetable chopper.

keep covered for sometime until the cauliflower is soft and open the lid and  fry some more.when it starts turning light brown,

10 seconds and sprinkle chickpea flour 4-5 tsp and fry until the chickpea flour
turns light brown.then add salt-1/4 tsp and garlic chilli pd-1 tsp and fry for 1 min.

CAPSICUM CHUTNEY

fry chopped capsicums-2 in 2 tsp oil until they start turning light brown in colour.remove from pan and keep it aside.break green chillies-6 in two and fry in the same pan with 1-tsp oil.take a mixie jar and put garlic pods peeled-3,tamarind-2 marble sized balls,salt according to taste,jeera-1 tsp,turmeric-1/4 tsp,fried green chillies and grind.later add the fried capsicums and grind again.
in a pan add 1-tsp oil and heat it up.tip in  mustards-1/2 tsp,dry red chilli-1 broken,urad dal-1/2 tsp,chanadal-1/2 tsp,curry leaves-1 sprig and fry.add to the chutney.


CHICKOO&DATES MILKSHAKE

4 cups chilled milk,chickoo-4 peeled,8-10 seedless dates,brown sugar-optional.
blend chickoo and dates  and then later add milk and blend.sprinkle almonds which are blanched and chopped.
