cut 3/4 kg of beetroot in small squares.sprinkle few drops of water on them and boil them for 3-4 min in an open pan until water dries up completely.
take a pan and heat it up with 1/2 tbsp of oil.tip in mustards-1/2 tsp and uraddal-1 tsp and after they change colour, tip in curry leaves-1 sprig,onion-1 big chopped,green chillies-2 slit and halved,salt and fry.when the onions start turning light brown add ginger&garlic paste-1/4 tsp and fry until the raw smell disappears.also tip in turmeric-1/4 tsp.now the beetroot pieces are ready to go in.
