DRUMSTICK LEAVES RASAM OR SOUP

required:oil-2 tsp,1 small size red onion-sliced thin,dry red chilli-1 broken,turmeric pd-1 pinch,salt-according to taste,black pepper pd-1/4 th tsp,large sour tomato-1 chopped,drumstick leaves-handful,water-3/4 th lt
method
take a sauce pan and fry the onion,turmeric pd,red chilli in oil until the onion sweats.now add the tomatoes,black pepper pd,drumstick leaves and fry a little.add water,salt. let it come to a boil and turn off after two min.

TOMATO RASAM

required:small size tomatoes-4 pureed and strained[sour variety],salt-according to taste, coriander-little with stems, ginger&garlic paste-a pinch,mtr rasam pd-1 tbsp or homemade rasam pd,black pepper pd-1/4 th tsp,sugar-a pinch, turmeric pd-2 pinches, shallot-1/2 small thinly sliced, tamarind paste-1/4 th tsp, water-3/4th lt
tempering:oil-1/2 tbsp, mustard seeds-1/2 tsp, cumin seeds-1/2 tsp, curry leaves-few
method
combine the tomato juice, salt,turmeric pd,water,ginger &garlic paste,rasam pd,black pepper pd, sugar,shallot,tamarind paste,coriander in a deep bottomed vessel.cook on high heat until all this comes to a boil and then simmer for 2 or 3 min.if the store bought rasam pd is used there will not be any residue of the powder.turn off and add the tempering and cover for a min with a lid.if homemade rasam pd is used proceed with the tempering and cover.pour this into the serving dish while avoiding the residue as much as possible with the help of ladle.

CARROT AND TOMATO RASAM

required:carrots-3,tomatoes[sour variety]-2 medium,rasam pd-4 to 5 tsp,red chilli pd-3/4 th tsp,salt-according to taste,coriander-1 small bunch,ginger&garlic paste-a pinch,water-1&3/4 th lt,tamarind paste-1 tsp,onion-1 small thinly sliced
for tempering:oil-2 tsp,mustard seeds-1 tsp,cumin seeds-1 tsp,curry leaves-1 sprig
method
peel and boil the carrots in very little water and puree them.blanch the tomatoes in hot boiling water and peel them.also puree them.now mix the tomato and carrot puree.add water,red chilli pd,turmeric pd,ginger&garlic paste,tamarind paste,onion,rasam pd to this puree.add coriander which is chopped along with stems.now heat up this mixture until it reaches a boiling point and reduce the flame. adjust the seasonings.when the water reduces a little,turn off.prepare the tempering and add to the rasam.

TOMATO RASAM WITH COCONUT MILK

required:turmeric pd-1 pinch,slit green chillies-5 or 6,coconut-1/2 portion grated,tomatoes-2 big,salt-according to taste,tamarind paste-1/2 tsp[optional if tomatoes are not sour],coriander leaves-few chopped,water-5 to 6 cups
tempering:oil-2 tsp,garlic cloves-1,mustard seeds-1 tsp,cumin seeds-1/2 tsp,curry leaves-1 sprig
method
grind the chopped tomatoes and strain the juice.grind the grated coconut with half the water and strain to get the thick coconut milk.put the grated coconut back in the blender and pour the remaining water and grind again to get the thin milk.strain again.now mix the tomato juice,coconut milk,green chillies,turmeric pd,salt and boil this for about 15-20  min on medium flame until the raw smell of the coconut disappears.add the coriander leaves lastly.
prepare the tempering and pour into the rasam.mix nicely.serve with rice.

MAMIDIKAYA PACHI PULUSU

required:green mango-1 which turned ripe,onion-1 medium-,jaggery grated-7 or 8 tsp,salt- according to taste,water-3/4 th lt
tempering:oil-1/2 tbsp,mustard seeds-1/2 tsp,cumin seeds-1/2 tsp,dry red chillies-4,curry leaves-1 sprig,turmeric pd-a pinch
method
boil the mango pieces in 1 cup of water.cook until they turn little soft and mash.add the remaining water to this.tip in the onion,jaggery,salt and mix nicely.
prepare the tempering with the above items and add to the above mango mixture.crush the dry red chillies with hand.

BEETROOT TOMATO RASAM

required:oil-1/2 tbsp,mustard seeds-1 tsp,curry leaves-1 sprig,dry red chillies-1 broken,beetroot-1 chopped in small pieces,tomatoes-4 chopped,water-1&1/2 lt,salt-according to taste,coriander-few leaves,garlic crushed-5 cloves, pepper corns-2 tsp
method
grind pepper corns to make powder.crush the chopped tomatoes with hand and add water to them.
heat oil in a pan and tip in mustard seeds,curry leaves.next add the dry red chilli.after it slightly changes colour tip in the beetroot pieces.fry them for a minute.now add the tomato and water mix.when the water starts boiling then add the crushed garlic,salt and pepper powder.cook further until the tomatoes are cooked.lastly add coriander leaves

required:moongdal-3/4 th cup,water-1/2 lt,salt-according to taste,red chilli pd-1/4 th tsp,turmeric pd-1 pinch,oil-2 tsp,mustard seeds-1/4 th tsp,cumin seeds-1/4 th tsp,curry leaves-1 sprig
method
boil the moongdal with water in an open vessel for sometime until the dal is cooked.it should not turn mushy.
drain the dal and collect the water.this dal can be used to prepare methi mongdal fry.
take a pan and heat up the oil.tip in mustard seeds,cumin seeds,curry leaves.when the mustards pop, pour the collected water into the pan and add turmeric pd,red chilli pd,salt.after one boil turn off the stove.

TOMATO RASAM-1

boil tomatoes-4 with water until the tomatoes are soft.when cool, grind the tomatoes along with the water and strain.take 2 tsp of peppercorns,curry leaves-1 sprig,jeera-1 tsp,garlic cloves-6 and grind in a small mixie jar.in a pan heat up 3 tsp of oil  and tip in the  ground powder and fry.now add the strained tomato juice.add tamarind juice and salt according to taste.boil for sometime until it reduces little and garnish with coriander leaves.

CORIANDER RASAM

fry green chillies-2,jeera-1tsp in a pan with 2 tsp of oil.grind them in a small mixie jar.when they are ground,add garlic cloves-4,peppercorns-1 tsp,coriander leaves-1 small bunch,coriander seeds-2 tsp and again blend.now put this mixture in a vessel.pour 1.2 lt water in it.also add tamarind paste-2 tsp or according to taste.heat the vessel on the stove until the rasam boils and reduces little.

DRUMSTICK MINT RASAM

boil the drumsticks with salt,turmeric and water.
grind black pepper,garlic,jeera,dry red chillies,tomatoes and mint leaves.
add this paste to the cooked drumstick and water.
tadka;dry red chillies,mustards,jeera
add tadka to the rasam.later add lemon juice to it.
