BREAD PIZZA WITH TOFU

with the help of a cookie cutter cut round slices of brown bread.
chop tofu and mix with finely chopped peppers[all the three colours],salt,chilli flakes,oregano.
apply tomato ketchup to the bread and put the prepared mixture on it.sprinkle processed cheese and mozarella cheese on it.put butter in a nonstick pan and put the bread pizza's in it and cover and cook until the cheese's melt.
tip:always add processed cheese and mozarella cheese together when preparing pizza at home

PANEER STUFFED POTATO

cut slightly thicker round slices of potatoes.boil them in water,salt and turmeric for 2-3 min.drain later.
in a pan,oil,onions,salt,garlic chopped,green peas,red chilli pd,paneer grated.fry lightly and keep aside.
now apply green chutney on top of potato slice and put the paneer mix on it and close it with another potato slice.prepare a solution of cornflour and water.
hold the sandwiched potato slices and dip them in cornflour water and deep fry

DRUMSTICK MINT RASAM

boil the drumsticks with salt,turmeric and water.
grind black pepper,garlic,jeera,dry red chillies,tomatoes and mint leaves.
add this paste to the cooked drumstick and water.
tadka;dry red chillies,mustards,jeera
add tadka to the rasam.later add lemon juice to it.

PATRANI MACHI

make pesto.grind parmesan cheese,garlic,green chillies,basil leaves,coriander,olive oil,roasted pinenuts and walnuts.
put the pomfret pieces in banana leaf and season with salt,pepper,olive oil.close them like individual packets
for each piece and tie them with a thread.
put water in a bowl and add malt vinegar and green chilli in boiling water.put the packets in a drain dish and put
the dish on top of boiling water and cover with a plate and cook the fish for 15-20 min

SPINACH CUTLET

blanch and chop spinach.paneer grated,garam masala,cardamom pd,chopped cashews,coriander,salt,g&g paste,
green chillies,mix them all nicely and add little besan for binding and make cutlets and shallow fry in a pan

ARBI OR CHAMADUMPALA CURRY

arbi boil and peel and cut them.
heat up the mustard oil nicely until it is smoking hot,brown cardamom,onions,g&g paste,green chillies,turmeric,
red chilli pd,hing,fry all these until brown,add arbi,salt,water and lassi to this and cook

CAULIFLOWER KURMA

in a pan take little oil and fry cinnamon,cloves,cardamom,star anise and saunf.turn off.when the pan is still hot 
add ginger,garlic,coconut,onions,dry red chillies to the same pan and sautegrind all the contents of the pan into a paste with water.
in the same pan add oil and fry the grounded paste again.
in another pan oil,green chillies,cauliflower florets which have been washed nicely,tomatoes little,fry the nicely until light brown,turmeric,salt,garam masala,dhania pd and finally add the fried paste.turn off ,then add curd.



TOORDAL CHUTNEY

fry the toordal and dry red chillies,turmeric a pinch.grind them with garlic,jeera,tamarind,salt,water.can add raw 
onions chopped to this.no need for tadka

CORIANDER TOMATO CHUTNEY

add oil to the pan.put coriander chopped and tomatoes chopped in the pan and cover for sometime.when they turn soft and cool down grind with garlic,jeera,salt,tamarind and fried green chillies. tadka:dry red chillies,urad dal,mustards,chanadal 

MINT CHUTNEY

fry dry red chillies,urad dal,also mint leaves.grind all of them together with garlic,jeera,salt,tamarind.no tadka

CARROT MINT CHUTNEY

cook the carrots with little water or fry them.also fry the mint leaves.fry the dry red chillies.grind cooked carrots and mint leaves with garlic,salt,jeera,tamarind and dry red chillies

MUSHROOM MASALA

oil,onions,g&g paste,khus khus+coconut paste,red chilli pd,salt,turmeric,curd,green chillies,coriander,add cooked mushrooms to this gravy

ACHARI MURG

oil,methi seeds,mustards,jeera,onions,green chillies,g&g paste,chicken,red chilli pd,water,curry leaves,salt,garam masala,lemonjuice[instead of lemon juice can also add mango pickle gravy for achari flavour]

METHI CRISPIES

mix grated carrot,ajwain,sugar,salt,curd,besan,green chillies,ginger chopped,baking soda,methi leaves.mix all the items like softer chapathi dough.apply oil to hands and spread the mixture like thick roti.cut the roti in different shapes and deep fry.

MUTTON IN COCONUT GRAVY

marinate mutton in a thin extract of coconut milk for 12 hours.
pan,coconut oil,shallots,green chillies,red chilli pd,cumin pd,g&g paste,coriander pd,mutton which has been marinated,bayleaf,cloves,cardamom,cinnamon,potatoes diced,thick coconut milk

CORN STUFFED PANEER PAKODAS

cut paneer into square pieces.make a mixture of corn boiled and crushed,chaat masala,green chillies,white pepper,coriander,onions,salt.put this mixture between the paneer slices.
make a batter of semolina,maida,salt,white pepper.dip the stuffed paneer pieces in this batter and deep fry.

POTATO PARTY GRAVY

take small sized potatoes.peel on the outside and scoop out the inside part.peel more on the outside so that they 
look like cylinders.then deep fry them.
prepare a mix of grated paneer,kissmiss,cashews,ginger,green chillies,coriander,cumin pd.stuff the potatoes with this.
pan,oil,g&g paste,[onions+cashews+green chillies]paste,[mint+coriander]puree,fry the pastes one after the other
and to this gravy add stuffed potatoes and cook

SWEETCORN DOSA

boil sweetcorn and mash-1/2 cup,dosa batter-2 cups,pepper crushed,salt,jeera,coriander.make dosa's with ghee

CONTINENTAL CUTLET

boil potatoes and mash.mix grated cheese,oregano,salt,onions,white pepper and mashed potatoes.put this mixture between 2 salt biscuits.make a solution of maida,salt,water.hold the 2 salt biscuits with the potato mixture and dip in the maida solution and deep fry

SPROUT SALAD

moong sprouts or any other sprouts,cashew,dates,kissmiss,almonds chopped,salt,white pepper pd,honey.mix them all nicely

LEAFY VEG AND RAGI VADA

take ragi flour1/2 cup,riceflour-2tbsp,chanadal soaked for 2 hours and coarsely ground-1 cup,mint leaves,salt,green chillies,ginger,coriander,jeera,2 cups mixed greens[spinach,thotakura,koyya thotakura].
mix nicely and make thin vadas.they can be eaten 2 days.

NUT PEPPER RICE

in a pan fry peanuts,peppercorns,cashews,sesame,urad dal and grind to powder.
in another pan add ghee,urad dal,dry red chillies,mustards,curry leaves,then add cooked rice and the above ground pd to the pan and mix nicely.

PANCHMEL KI KICHDI

soak the mixed dals for 1 hour.first cook the mixed dals and then add rice,bajra[pearl millet or sajjalu],sesame,brown wheat rawa,salt.cook until all this turns soft

SOY GONGURA PAKODI

soak soyachunks in hot water.then drain and squeeze out the chunks.to these chunks add gongura paste,salt,chilli flakes,maida,cornflour,g&g paste,curry leaves chopped.make pakoda.

PANEER MOONGDAL FRY


pour ghee in a pan then add dry red chillies,mustards,green chillies,ginger chopped,soaked moongdal,salt.fry little bit.turn off,add grated paneer,limejuice,coriander.

SANGAM DAL


boil chana dal,masoor dal,moong dal with skin,urad dal with skin,toordal with salt,hing,turmeric and water,after soaking.
in a pan add ghee,cinnamon,cloves,shahjeera,black pepper corns,onions,fry until golden,tomato,ginger chopped,green chillies,coriander,salt,garam masala,hing,dal,boiled water[always add boiled water for dals]
tadka:ghee,red chilli pd.
tip:if the dal is thickening always add boiled water

BABY POTATOES WITH CREAM

boil and peel baby potatoes -7
grind tomatoes+onions+garlic+ginger+red chilli pd
in a kadai add butter,oil,cloves,cardamoms,cinnamon,ground paste,salt,fry nicely until the oil seperates.
then add little sugar and cream-2 tbsp

required:aloo-5,ghee-1/2 tbsp,oil-1/2 tbsp,mustard seeds-1/2 tsp,cumin seeds-1/2 tsp,hing-a pinch,water-1 cup,coriander seeds-1&1/2 tsp,turmeric pd-1/4 th tsp,red chilli pd-1 tsp,garam masala-1/2 tsp,salt-1/2 tsp,tamarind paste-3/4 th tsp,green chillies-2 slit,ginger-1 small piece finely chopped,tomato-1 big,coriander-few leaves chopped
method
boil the aloo with water in a pressure cooker for 1 whistle.peel and dice or mash.coarsely grind the coriander seeds.now mix water,coriander pd,salt,turmeric pd,red chilli pd,garam masala,tamarind paste and keep this aside for 20 min.
take a pan and add both ghee and oil.tip in the mustard seeds,cumin seeds,hing.now pour the water mix and let it come to a boil.add the tomato,green chillies and ginger at this stage.cook for sometime on a low flame until the tomato is cooked.add the aloo and cook for little more time.finish off with the coriander leaves.serve with chapathi or make a sandwich and toast.

PANEER PURI

paneer grated-1/2 cup,maida-1/2 cup,cornflour-1tsp,kasoori methi,green chilli paste,ginger paste,red chilli pd
coriander.prepare puri dough with little water if necessary and all the above ingredients
dust with maida and roll into puris's.deep fry.

KELE KALONJI

heat oil-2tsp in a pan.tip in jeera-1/4 tsp,saunf-1/4 tsp,kalonji or onion seeds-1/4 tsp,ripe bananas-1 bowl,salt,black salt-1/4 tsp,red chilli pd-a pinch,chilli flakes-1/2 tsp.add one after the other and turn off when the bananas turn soft.serve with paranthas.

PINEAPPLE SALAD

dice pineapple and chop walnuts,crushed mint,honey,green chillies,salt,grated coconut.mix all of them together

IVYGOURD AND BLACK CHANA GRAVY

oil,mustards,dry red chillies,curry leaves,onions,g&g paste,tomatoes chopped,green chillies,turmeric,dhania pd,salt,red chilli pd,ivy gourd chopped lengthwise,cook for sometime until ivygourd softens then add coriander 
and chopped curry leaves

YELLOW MOONGDAL AND CABBAGE PAKODI

chopped cabbage,salt,red chilli pd,ginger,curry leaves chopped,riceflour,soaked and ground yellow moongdal,green chillies

steam  sweet potatoes-2 and dice.take chopped tomato-1.squeeze the tomatoes and add to the potatoes.tip in salt-according to taste,garam masala-pinch,chaatmasala-1/4 tsp,limejuice-few drops,red chilli pd-according to taste and mix nicely.

PALAK STICKS

squarely cut palak leaves,tomato,onions.keep them on a toothpick alternatively until little space is left on the toothpick.take care to put more palak leaves.marinate these toothpicks for 5 -10 min with salt,chaatmasala,pepper pd,limejuice.
make a batter with besan,salt,karam,green chillies paste,coriander,chaat masala,water.make like bajji batter.
dip the toothpicks in besan batter and deep fry.

CREAM OF BADAM SOUP

badam blanch and paste or soak, remove skin and paste.oil,butter,onion-1tsp,garlic,ginger,maida-1tbsp fry until
it doesn't change colour,then add milk-1/2 cup,veg stock-1&1/2 cups,salt,white pepper,sugar.when it boils
once then add badam paste,strain.add cream and serve

KANDA[YAM] ULLIKARAM FRY

boil the kanda with turmeric and salt.
grind khus khus,garlic,tamarind,dhania seeds,ginger,onion like paste.
oil,fry the paste until raw smell disappears,curry leaves,kanda pieces,salt,karam,coriander

DRY FRUIT, BLACK CHANA FRY

oil,chana dal,urad dal,mustards,ground onion paste,carrot grated,green chillies,salt,grated coconut,soaked and boiled black chana ,coriander.
in another pan,oil,cashews,badam one after the other fry and remove.
add the fried dry fruits to black chana mix.

PALLI PAKODI

raw peanuts-1 cup,g&g paste,salt,karam,besan-1/2 cup,riceflour-2 tbsp,water.mix into a thick paste and deep fry like pakoda.later sprinkle chaat masala

BEETROOT FINGERS

boiled mashed potato,grated beetroot,coriander,salt,jeera,red chilli pd,ajinamoto,cornflour,bread crumbs,green
chilli paste,g&g paste,garam masala.mix and mash them nicely.shape them into long thin fingers and deep fry.

GREEN BABYCORN BAJJI

make a of paste green chillies+ginger+garlic+salt+coriander add to maida.
add cornflour also to the mix,enough water to form bajji batter
dip the babycorn in this and deep fry

PAPPU MASALA


deep fry poha,peanuts
mix onions,green chillies,coriander,ginger,raw mango pieces.to this mix poha and peanuts.salt,karam,jeera pd.
