RAGI VERMICELLI UPMA

cook the vermicelli according to instructions on the pack.add 2 tsp oil in a pan.tip in 1/2 tsp mustards,1/2 tsp urad dal,1/2 tsp chanadal,curry leaves-1 sprig and fry.now tip in ginger-small piece chopped finely,onion-1 small sliced finely,green chillies-2.fry the onion for a little while until it  softens.add salt and mix nicely and then tip in the steamed vermicelli and mix nicely

take banana-1,kiwi-2,strawberries-7 or 8 and blend with icecubes.pour the smoothie in glasses.

TOMATO RICE-1

put oil in a pan and heat up.then tip in mustards-1/2 tsp,,uraddal-1 tsp,chanadal-1 tsp,curry leaves-2 sprigs,
one after the other and fry.now add ginger finely chopped-1" piece ,green chillies-2,cashews-1 tbsp and onions chopped.if small onions are not available then use regular onions-2 medium sized.keep frying them and add chopped tomatoes and tip in salt,red chilli pd-1 tsp,turmeric-1/4 tsp.mix nicely and cover.open the lid
and check to see if the tomatoes turned soft.if they turn soft and oil starts to appear on surface add chopped coriander and cooked rice and mix without any lumps.


PALAK NAMKEEN

maida-2 handfuls,ajwain[carom seeds]-1 tsp,ghee-2 tsp,blanched and pureed palak or spinach-small bunch,mix nicely and make like roti dough and roll.cut the roti in small pieces,with the help of a knife or a cookie cutter.deep fry on slow flame.after they come to room temperature store in a airtight container.

make rasberry jelly according to the instructions on the pack and while still hot pour the red coloured liquid as shown in the glasses.let it set. then prepare the mango jelly as per instructions on the pack and while still hot pour the yellow liquid on the rasberry jelly as shown in the picture.put the glasses in the refrigerator after 10 min.serve in the glass.

take one bunch of methi[fenugreek] leaves.wash and chop them with stems.add wheat flour 5-6 handfuls,salt,red chilli pd,
and chickpea flour-2 tsp to the leaves.make a tight dough with little water.let it rest for 10 min.roll the paranthas and fry them with oil.

BANANA APRICOT CURD SHAKE

take yellow bananas-2 small sized,apricots-4,curd-5 tbsp,ice cubes.do not use sour curd.blend all of them together and pour in the glass.



PLANTAIN FRY

cut the plantain in thin slices after removing the skin.put oil in a pan and tip in mustards,urad dal,curry leaves.fry them and tip in turmeric,salt,plantain slices. keep frying until the plantain changes colour and add garlic chilli pd.

BEANS COCONUT FRY

cut the beans,add salt and boil them with water-less than 1/4th of a cup.let the water dry up after the beans are boiled.do not boil for long time as the beans change colour.take a pan and heat up some oil-3 tsp,mustards,urad dal,curry leaves,turmeric.when they are fried tip in the beans and fry for a min.now tip in grated coconut and fry until the coconut is fried.add garlic chilli pd at the last.

make long slices of ivygourd.cut each one in 4 or 6 slices.mix jeera,salt,turmeric,red chilli pd,salt,besan with ivygourd.add just enough besan to coat the slices. the batter should be salty and spicy before frying.deep fry the ivygourd.take another pan put oil-1/2 tsp,garlic crushed,curry leaves,fried ivygourd and mix nicely and put on an absorbent paper and remove the excess oil.


COCONUT FRY

grate one coconut.put oil in a pan-1tbsp and heat it up.next add mustards,urad dal,onion chopped-1 medium sized,green chillies-3,turmeric,curry leaves,1/2 tsp ginger and garlic paste one by one.fry both the onion and paste nicely
now tip in the grated coconut.saute until the coconut is fried.coconut should not turn brown.then tip in the salt
and immediately add milk-3 tbsp  and let the coconut turn soft and mix nicely and turn off the heat

LADIES FINGER&SOYAGRANULES FRY

choose dark coloured ladies finger.wash and cut the ladies finger.soak the soya granules in hot water for 5 min or until you are able to bite into it. cool and squeeze out the water from the granules and set aside.
in a pan,add oil and heat up. chop one medium sized onion.tip the onion into the oil and fry.after the onion turns light brown,put ginger garlic paste-1tsp and fry.now add chopped ladies finger,turmeric pd.after they are half fried add squeezed soya granules.fry again and put salt,red chilli pd and finally garam masala pd.
var:can increase the quatity of soya granules and add little ladies finger.

take 11/4 kg of prawns and wash them for 3-4 times with salt and turmeric.heat up oil-2 tbsp in a pan.tip in cloves-2,cardamom-1,cinnamon-1/2 inch piece and fry them.then add onions-3 big,green chillies-3,g&g paste-3-4 tsp,salt,turmeric-1/4 tsp.fry nicely until the onions turn brown.then tip in prawns and fry for 2 min and add water-1 cup and cover for a min.then add cashew-4 and khuskhus-2 tsp ground powder as shown in the picture.tip in red chilli pd-2-3 tsp and cook for another 3 -4 min and add garam masala pd-1 tsp.
