RIDGEGOURD AND DRY SHRIMP

peel and chop ridgegourds-2.sometimes they turn out to be bitter.cut a small piece from each ridgegourd and taste.if one piece is bitter then throw away that particular ridgegourd.clean and nicely wash the dried prawns for 2-3 times and soak in water for 10 min.take a pan and heat it up with 3 tsp oil,1/2 tsp mustard seeds,curry leaves-1 sprig,fry them and tip in chopped onion-1,turmeric-1/4 tsp,salt-1/4 tsp.when the onion turns translucent then tip in the soaked prawns and fry for a min.now add ridgegourd.

fry for a min and add water-1 cup and cover.open it after a min and add red chilli pd.

BRINJAL AND GREEN PEAS FRY

take long purple brinjal-500g.before you start chopping keep salted water ready.chop them and put in salted water simultaneously.by soaking them in salted water the brinjal will not turn bitter and also will not stick to each other when frying.

boil frozen green peas-100 g and keep.grind green chillies-3,ginger-1&1/2"piece along with jeera-1tsp in a mixer.put oil-1 tbsp in a pan and heat it up.tip in mustards-1/2 tsp,uraddal-1 tsp,curry leaves-1 sprig and fry,add onions chopped-2 medium,fry until 
they turn translucent.now add the green chilli paste,salt and chopped brinjals and fry on high flame for 1 min.then reduce the flame and cover until the brinjals turn little soft.remove the lid and fry little more and finally add garlic chilli pd-1/2 tsp.

FRIED CASHEWS

put 1 tsp ghee in a pan and heat it. put 200 g of cashews in the pan and stir continuously to evenly brown the cashews.turn off the heat and stir if the pan is hot.after they are fried put them in a bowl and tip in salt-according to taste,red chilli pd-less than 1/4 tsp and pepper pd-1/4 tsp.mix nicely.

STRAWBERRY CUBES

slice the  strawberry and put them in the ice tray.pour water and freeze.grapes also can be added instead of strawberry.these cubes can be used for garnishing the juices.




EGG FRY


boil eggs-6 on low flame for 30 min.let them cool and peel.also take a knife and make 2-3 slits on each egg.keep them aside.chop onions-6 big.heat a pan with 1/2 tbsp oil,tip in mustards-1/2 tsp,uraddal-1/2 tsp and after they change colour add chopped onions,curry leaves-1 sprig,turmeric-1/4 tsp,green chilli-1 slit and halved.fry the onions until they turn soft and then add g&g paste-1/4 tsp
and fry until the raw smell disappears.tip in salt-1/4 tsp or according to taste.

when the onions turn light brown add the eggs to the pan.mix nicely and add garlic chilli powder.turn off after a minute.

method
put readymade strawberry crush in the serving glass and squeeze lime juice in the glass.next pour sprite into it.add icecubes.garnish with mint leaves and serve.

TAMARIND SHERBET

add tamarind paste,sugar to water and mix to make the water sour and sweet.take haldiram's readymade boondi and mix it with the spice pd given in the packet.now pour the tamarind water in the glasses
and add boondi just before serving.

BEANS CARROT MOONGDAL FRY

chop beans and carrot.wash and soak moongdal for 5 min.put all of them in a cooker with water-1/4 cup and also add salt,turmeric-1/4 tsp and steam them for 5 min without whistle.take a pan and add 3 tsp oil and heat it up.tip in mustards-1/2 tsp,uraddal-1/2 tsp,curry leaves-1 sprig,fry them.now add cooked beans,carrot,moongdal and stirfry for sometime.check the salt and at last add garlic chilli pd.

slice onion-1  big,green chillies-2 chopped,cornflour-1 tbsp,maida-1&1/2 tbsp,enough water,curry leaves-1 sprig chopped,salt according to taste.
take sliced onion and add salt,green chillies and mix well.next add cornflour,maida and mix so that they coat the onion.now add enough water to make a tight paste.also tip in curry leaves along with hot oil-1 tsp.now deep fry.

ROASTED MAKHANA

heat a pan with1 tsp of ghee and 1/4 tsp salt.tip in the makhana and stir fry for 3-4 min.lastly tip in 1/4-1/2 tsp of pepper pd and mix nicely.

BABYPOTATOES STIR FRY

boil baby potatoes-250 g in cooker or 1 whistle.cool and peel them.heat a pan with 2 tbsp oil and tip in the boiled baby potatoes and fry nicely until brown.now remove the extra oil.tip in salt,turmeric,spice pd[ see recipe- sesame and roasted chanadal powder],coriander chopped.

heat oil,tip in jeera or saunf,curry leaves and fry.now tip in onion,ginger,garlic,green chillies,coriander and fry until onions sweat.now add paneer,salt,dhania pd and pepper pd.fry until paneer is coated well with the dhania pd and pepper pd.

heat the ghee-1 tbsp in a pan and fry the grated onion-1  till brown.add curd-2 tbsp,chilli pd and salt and fry till the ghee seperates from the masala.then add the green grapes-250 g and fry.then add water-1/2 cup and cook for 3 min.garnish with coriander leaves.serve with roti.

EGG LIVER FRY

take 250g of goat liver.wash and cut in small pieces.chop onions-2 small,green chillies-2 slit.mix liver,red chilli pd-2 tsp,salt,ginger garlic paste 2-3 tsp,turmeric-1/4 tsp,onions and green chillies.put this mix in a pan  with a glass of water and cover and cook for sometime until the liver is soft and cooked

now in another pan add oil-2 tbsp,and put curry leaves and boiled liver and fry for sometime.when the liver is fried, tip in garam masala-1&1/2 tsp.move the liver to oneside and add eggs-2.season them with salt and pepper pd and fry.

CABBAGE CARROT STIRFRY

grate carrots-4 and chop cabbage-1 small, in thin strips.heat a pan and put 3-4 tsp oil in it.tip in dry red chilli-1,mustard seeds-1 tsp,curry leaves and now add cabbage,carrot,tumeric in the pan and salt.cover for sometime until the cabbage wilts.

POTATO&YELLOW CUCUMBER CURRY

required:oil-2 tbsp,mustard seeds-1 tsp,cumin seeds-1 tsp,turmeric pd-1/4 th tsp,curry leaves-1 sprig,chopped onion-1 medium,green chillies-2,potatoes-1/2 kg diced,yellow cucumber-1 big peeled and diced,red chilli pd-1 tsp,salt-according to taste,water-2 to 3 cups
method
always check the cucumber for bitterness.sometimes even if the seeds turn out to be bitter the remaining part of cucumber can be used if it is not bitter.
take a pan with oil and heat it up.tip in mustard seeds,cumin seeds,curry leaves and fry.when the mustards pop;tip in onions,green chillies,turmeric pd.fry until the onions turn light brown and now add potatoes.fry for 2 min on medium flame.now add yellow cucumber and stir for a min.potato and cucumber should be cut in the same size.the quantity of potato should be little more than cucumber.now tip in chilli pd,salt,water.cover and cook for sometime until they soften.

take soyagranules-100 g and put them in hot water for 7-8 min.strain ,wash them with cold water and squeeze them and keep.heat oil-1&1/2 tbsp in a pan.tip in cinnamon-1/2" piece,cardamom-1,cloves-2,fry them.now tip in chopped onion-1 big,green chillies-2 slit,ginger& garlic paste-1 tsp.fry until the onions turn light brown.now tip in chopped tomato-1 and curry leaves-1 sprig and fry.when the tomato softens a little add

boil arbi or chamadumpalu for 1 whistle in a cooker on high flame or boil seperately.peel them.if they are small 
in size use them as a whole or cut them into two pieces.heat up a pan with 1 tbsp oil and tip in mustards,urad dal,curry leaves,salt,arbi and keep on frying until they change colour.then add dhania pd-1tsp,roasted jeera pd-1tsp and fry for more time.lastly add garlic chilli pd,mix nicely and turn off the heat.

BROCCOLI FRY

take medium sized broccoli-1.tear it into florets and wash nicely.do not let them dry.now tip in chickpea flour,salt,turmeric,red chilli pd into the florets and mix.put olive oil-1 tbsp in a pan and put the florets.cover for 2-3 min and then open and fry until the chickpea flour changes colour.instead of chickpea flour riceflour also can be added.

method

in a pan pour oil and after it heats up tip in mustard seeds,uraddal,curry leaves and turmeric pd.after the mustards pop add the onions.onions when pink and transperant, tip in the green chilli paste.squeeze out the water from the brinjal and add them to the pan.keep on high flame and cover for 1/2 a min.when the brinjal changes colour slightly,mix nicely and reduce the flame.
keep frying for sometime until the brinjal turns soft and finally add garlic chilli pd.
