BRINJAL OR EGGPLANT FRY

required:brinjal-1/2 kg,oil-1 tbsp,mustard seeds-1 tsp,uraddal-1 tsp,turmeric pd-1/4 th tsp,curry leaves-1 sprig,onions-2 small-vertically sliced and halved  ,green chillies-4,ginger-1" piece,salt-according to taste,garlic chilli pd-1/4 th tsp
method
take long purple brinjal.before you start chopping keep salted water ready.chop them and put in salted water simultaneously.by soaking them in salted water the brinjal will not turn bitter and also will not stick to each other when frying.grind green chillies and ginger together to make a paste.


in a pan pour oil and after it heats up tip in mustard seeds,uraddal,curry leaves and turmeric pd.after the mustards pop add the onions.onions when pink and transperant, tip in the green chilli paste.squeeze out the water from the brinjal and add them to the pan.keep on high flame and cover for 1/2 a min.when the brinjal changes colour slightly,mix nicely and reduce the flame.
keep frying for sometime until the brinjal turns soft and finally add garlic chilli pd.
