required:aloo-5,ghee-1/2 tbsp,oil-1/2 tbsp,mustard seeds-1/2 tsp,cumin seeds-1/2 tsp,hing-a pinch,water-1 cup,coriander seeds-1&1/2 tsp,turmeric pd-1/4 th tsp,red chilli pd-1 tsp,garam masala-1/2 tsp,salt-1/2 tsp,tamarind paste-3/4 th tsp,green chillies-2 slit,ginger-1 small piece finely chopped,tomato-1 big,coriander-few leaves chopped
method
boil the aloo with water in a pressure cooker for 1 whistle.peel and dice or mash.coarsely grind the coriander seeds.now mix water,coriander pd,salt,turmeric pd,red chilli pd,garam masala,tamarind paste and keep this aside for 20 min.
take a pan and add both ghee and oil.tip in the mustard seeds,cumin seeds,hing.now pour the water mix and let it come to a boil.add the tomato,green chillies and ginger at this stage.cook for sometime on a low flame until the tomato is cooked.add the aloo and cook for little more time.finish off with the coriander leaves.serve with chapathi or make a sandwich and toast.
