GREEN MANGO RICE

take sonamasoori rice-2 cups.wash and add 4&1/2 cups of water and cook.sprinkle grated green mango-1,turmeric-1/2 tsp,salt-2tsp and carrot grated-1 small on the hot rice.let it cool.
for tempering:take a pan and add oil-2 tbsp,mustards-2 tsp,uraddal-2 tsp,chanadal-2 tsp,dry red chillies-2,peanuts-1&1/2 tbsp ,curry leaves-3 sprigs,green chillies-10-12,ginger- finely chopped.pour this tempering over the rice and mix with light hands.serve at room temperature.




RAGI DRINK

take 350 ml of water in a vessel and mix the ragi powder-1 tbsp without any lumps.heat up the vessel on low flame and keep stirring for 2-3 min.add the jaggery syrup-1/2 tbsp and mix.now add milk-1/2 cup which is already boiled.stir and serve hot.
jaggery syrup:take jaggery and melt it in water and strain.now boil this water until a thick golden brown syrup is  formed.cool it.this can be stored in the refrigerator.

RICE RAWA UPMA

wash and soak yellow moongdal-1/4 cup for 10 min.
heat oil-1 tbsp in a pan and tip in mustards-1/2 tsp,jeera-1 tsp,chanadal-1/2 tsp,uraddal-1 tsp,dry red chillis-5 broken into small pieces,curry leaves-1 sprig and fry until the mustards crackle and dal's change to a light brown.
immediately add soaked moongdal-1/4 cup,fry until smell emanates from it.then add water-2&1/4 cups,salt-1/2 tsp or according to taste.when the water starts boiling ,add rice rawa-1 cup and cover until it's cooked.

CABBAGE GREEN PEAS MASALA

shred the cabbage and onion lengthwise.boil the frozen green peas and keep.heat oil-1 tbsp in a pan and tip in jeera-1/2 tsp,onion-1 big,green chillies-5 and fry.now add cabbage-1 small size,turmeric-1/4 tsp.saute on high flame for 2-3 min.tip in dhania pd-1/2 tsp,jeera pd-1/2 tsp,garam masala-1 tsp,boiled green peas-handful,salt-according to taste an cover until the cabbage is slightly soft.

TOMATO EGG SCRAMBLE

heat oil-1&1/2 tbsp in a pan.tip in jeera-1/2 tsp and onions-2 medium which are chopped finely and fry until they are light brown.now add tomatoes-2 big chopped fine,red chilli pd-1 tsp.saute until the tomatoes are soft and oil appears on the surface.add salt-according to taste and eggs-4.keep on stirring.add coriander -few leaves.keep mixing until the eggs turn to a smooth mixture without any lumps.serve with pulka.

take 1 big bunch of thotakura.wash for 3 times in plenty of water and chop it nicely along with the stems.add 4 tsp oil in a pan and heat it up.tip in mustard seeds-1/2 tsp,uraddal-1 tsp,dry red chillies-2 broken into small pieces,turmeric pd-1/4 tsp and fry till the mustards crackle and the dal turns light brown in colour.take onion-1 small and after finely chopping it add to the pan.fry until the onion turns a light brown.now tip in the chopped leaves.mix nicely and cover for 2-3 min.later when the leaves turn soft, tip in salt and garlic chilli pd according to taste.

YELLOW MOONGDAL DOSA

soak yellow moongdal-1 cup for 2-3 hours along with a handful of sonamasoori rice.grind the dal and rice with green chillies-5-6,ginger-1"piece,salt along with water to obtain dosa batter consistency.heat a nonstick pan and pour 2 or 3 ladles of batter and make the dosa by spreading the batter in a circular motion with the same ladle.with the help of a spoon pour 1/2 a tsp of refined oil around the dosa and let it brown on a medium to high flame.once it is light brown and fried, fold and remove to a plate.serve with ginger or coconut chutney.take finely chopped onions and cumin seeds.add little salt to them and nicely crush them with fingers.sprinkle them on the dosa immediately after spreading the dosa.this is optional.

THOTAKURA RICE

take sona masoori rice or basmathi rice-1&1/2 cups and cook.let it come to the room temperature.take thotakura-1 big bunch and wash it nicely.grind the leaves along with stems after trimming the ends.also add
green chillies-5 when making the puree.add little water to make the puree.

in a pan add oil-2 tbsp and tip in cloves-7,cardamom-3,cinnamon-1 "piece,broken dry red chillies-2 and fry.also add ginger and garlic paste-2 tsp and fry.now add the ground paste and saute until the the raw smell from the leaves disappear.add the cooked rice along with salt and mix nicely.serve with raitha.

ROSE LASSI

required:water-1/2 cup,chilled curd-1&1/2 cups,rose syrup-1 to 1/2 tbsp,vanilla essence-few drops,green cardamom-2 nos,sugar-1 tsp,icecubes-4 or 5
method
take curd and beat it until smooth.crush cardamom with sugar.mix cardamom pd,rose syrup,icecubes,vanilla essence,water,curd and strain.rose syrup adds colour and also sweetness to the lassi.

ROSE LEMONADE

take chilled water-1 lt in a bowl.add the juice of 3-4 lemons to the water.pour rose syrup about 1&1/2 tbsp and mix.grind 2 cardamom pods with 1 tsp of sugar in a small mixie jar and add this powder to water.mix all nicely and pour in glasses.

BREAD PAKODA

take whole grain bread or brown bread and cut the slices into squares.do not trim the edges.avoid milk bread because it's little sweet.take a bowl of chickpea flour and add salt-according to taste,red chilli pd-1 tsp,riceflour-2 tsp,soda-2 pinches,jeera-1/2 tsp and mix with water until it forms thick batter.the batter should be spicy and it should have enough salt .only then the spice will be right after the pakoda is fried.now coat the bread pieces with batter and deep fry.

RICE OMELETTE

onion finely chopped-1 tbsp,green chillies-2 chopped,jeera-1/2 tsp,red chilli pd-3/4 tsp,salt-1/2 tsp,coriander- few leaves chopped.mix all this with hand nicely.now add eggs-2 and cooked rice-2 tsp  to this and beat with a spoon.pour the egg mixture on a  pan which is heated with oil-3 tsp.when cooked on one side fold and cook.also turn and cook on the otherside.

TOMATO BATH

take sooji or bombay rawa filled in a 250 ml glass. roast the rawa in ghee-2 tsp in a pan until light brown.remove the rawa to a plate.in the same pan pour oil-1&1/2 tbsp and heat it up.now tip in mustard seeds-1&1/2 tsp,uraddal-1&1/2 tsp,chanadal-1 tsp and fry until the mustards crackle.
now add lengthwise chopped onion-1 small,tomato-1 big diced.also add green chillies-4 or 5 lengthwise slit and chopped,curry leaves-2 sprigs,ginger-1" piece finely chopped.fry until the tomato turns soft and add water-3 glasses[same glass which is used measure rawa].when the water reaches to a boilng point pour the rawa while stirring continuously otherwise lumps will be formed.cook covered.
open the lid once and add some chopped coriander and close.turn off when the rawa is cooked.it takes less than 3-4  min.this can be served with cashewnuts fried in ghee.

take chilled milk-1 glass or 250 ml in a blender.add chopped kiwi which is ripe and chilled.then add drinking chocolate pd-1/2 tsp and chocolate syrup for sweetness according to taste.blend and serve.

eggs should be in room temperature.mix salt-2 pinches and red chilli pd-1/2 tsp with few drops of water so that they will mix evenly with the egg.add eggs-2 to this and beat lightly for 4to 5 seconds.heat a pan with 3 tsp of oil and pour this on a pan.when cooked on one side flip it to the otherside or just fold in half and turn to cook on the other side.

take oil-1 tbsp and  heat it up in a pan.tip in mustards-1/2 tsp,onion-1medium julienned ,fry,add salt-1/2 tsp or according to taste.when the onion turns light brown, add cabbage-1 small&capsicum-1 small julienned and saute for 2 min.tip in jeera pd-1/2 tsp,red chilli pd-3/4 tsp and cover for 2 min.remove the lid and add curry leaves,coriander finely chopped and saute for a min.turn off.the quantity of capsicum can also be increased.

YAM AND FLATTENED RICE VADA

take poha or flattened rice-1 cup and wash it once and soak in water for 2 min.squeeze out the water and put on a plate  or bowl.take yam-150 g and grate it after applying oil to hands.squeeze out the water and add this to the flattened rice.also add curry leaves-1 sprig chopped,ginger -1" piece chopped,salt,green chillies-5 chopped,coriander finely chopped.mix nicely and shape this mixture in balls or flatten them like vada.deep fry.

YAM FRY

grate the yam-1/2 kg.wash it nicely for 2 times with salt and turmeric in plenty of water.put it in a muslin cloth and tie all the loose ends. put a mortar or any other heavy substance on this for sometime until the water drains out.

take a pan and heat it up with oil-2 tbsp and tip in cardamom-1,cloves-2,cinnamon-1/2" piece and fry.now tip in finely chopped onion-1 big,green chillies-2 slit and halved,g&g paste-1 tsp,curry leaves-1 sprig and fry until onions are light brown in colour.now add the grated yam and fry uncovered until brown in colour.add red chilli pd-1/2-3/4 tsp and garam masala-1/2 tsp.

crush the dry dates in a mortar and pestle.remove the seeds.soak them in double the quantity of water for 5-6 hours.later just pour the water in a glass and serve chilled.
