YAM FRY

grate the yam-1/2 kg.wash it nicely for 2 times with salt and turmeric in plenty of water.put it in a muslin cloth and tie all the loose ends. put a mortar or any other heavy substance on this for sometime until the water drains out.

take a pan and heat it up with oil-2 tbsp and tip in cardamom-1,cloves-2,cinnamon-1/2" piece and fry.now tip in finely chopped onion-1 big,green chillies-2 slit and halved,g&g paste-1 tsp,curry leaves-1 sprig and fry until onions are light brown in colour.now add the grated yam and fry uncovered until brown in colour.add red chilli pd-1/2-3/4 tsp and garam masala-1/2 tsp.
